Request for opinions on hardware sizing - 30TB storage

Hi all,
we need to create a Vmware cluster that has 4 diskless nodes connected to a redundant SAN.
Current Virtual Machines are on an old style san on SSD and FC + NFS. (QLogic 57810 10 Gigabit Ethernet Adapter)
We have seen this solution and it seems very interesting.

The required storage space is approximately 30TB, currently the virtual disks occupy 24 TB.
if we choose your product, we need assistance.

Request:
How many nodes do you recommend with these specifications?
How many OSDs per node?
SSD or NVME?
What type of CPU do you recommend?
How much RAM per node?
For the network I was thinking of at least 40G, better 100G if iSCSI is used.
What do you recommend for connecting to Vmware? (iSCSI over 100G? FC? ..)

If we wanted to use Supermicro, is there a particular machine that you recommend?
We don't have a huge budget, it would be better to be able to use recent but refurbished hardware.
