That command does show the correct version.
Version: 1.8.21p2-3ubuntu1.4
But when running just sudo -V it reports the older version.
Sudoers I/O plugin version 1.8.21p2

How do I switch to using the deb package version?
I don't think I have made any changes to the repos other than what you have told me to change in the past, and we switched that back this weekend for the update to 2.8.0 instead of waiting for the 45drives specific versions.

You are already using the correct deb package version 1.8.21p2-3ubuntu1.4. There is nothing required to be done.
fyi debian package versioning
https://www.debian.org/doc/debian-policy/ch-controlfields.html#version
1.8.21p2 is the upstream version
3ubuntu1.4 is the debian_revision
