Yes ! I build a POC with petasan on my Xenserver 7.0 pool. I install the xstools inside the vm whitout problem.
I made a few ajust on multipath to have active/active path from xenserver.
All tests are ok for the moment.

Not sure i understand the question well...but in PetaSAN you can only remove an OSD if it has failed, a running OSD cannot be removed. The data for each iSCSI disk/lun and its replica is distributed across all OSD disks in the cluster to achieve parallel access.
